Job Summary 

The Corn Tortilla Patters will be responsible for the authentic preparation and hand-crafting of corn tortillas, using traditional methods, for a live festival performance. This role requires expertise in scratch masa preparation, hand-rolling techniques, and comal cooking. The artisan will perform two distinct functions: preparing masa and forming tortilla balls in regular attire, followed by a live, on-stage demonstration of hand-patting and cooking tortillas while wearing traditional fiesta attire.


Essential Functions:

Masa Preparation & Prep  - Part 1

  • Prepare corn (maiz) masa from scratch using traditional ingredient
  • Ensure proper hydration and consistency of the masa
  • Divide and form masa into uniform balls for efficient tortilla production
  • Maintain a clean and organized workstation
  • Ensure proper storage of prepared product


On-Stage Tortilla Performance - Part 2 in a Fiesta Dress

  • Perform live, on-stage hand-patting and cooking of corn tortillas on a traditional comal
  • Maintain consistent size, thickness, and patterned textures in the tortillas
  • Wear provided Fiesta dress attire during this portion of the shift
  • Engage with the audience and provide a visually appealing and authentic demonstration of tortilla-making
  • Maintain a clean and safe cooking area on stage
  • Ensure the consistent quality of the product throughout the performance
  • Adhere to all food safety and sanitation regulations
  • Collaborate with event staff to ensure smooth performance flow


Minimum Qualifications:

  • Proven experience in hand-making corn tortillas with traditional methods
  • Expert knowledge of scratch masa preparation
  • Proficiency in hand-rolling and comal cooking techniques
  • Ability to work efficiently and accurately in a fast-paced, public setting
  • Comfortable performing in front of an audience
  • Ability to follow instructions and maintain consistency
  • Ability to adapt to changing conditions and schedules
  • Must be able to wear required fiesta dress attire
  • Must be able to maintain a positive and engaging persona


Physical and Mental Requirements:

  • Ability to stand for extended periods and perform repetitive hand motions
  • Ability to lift and carry up to 25 pounds
  • Ability to work in a hot environment (comal cooking)
  • Excellent hand-eye coordination and dexterity
  • Ability to maintain focus and composure during live performance
  • Ability to handle the pressure of a live performance


Requirements:

  • Must be 18 years of age or older
  • Must provide own comfortable shoes to wear under fiesta dress


Work Environment:

  • Work areas include both a prep kitchen and a live performance stage
  • Potential exposure to heat from weather and comal
  • Exposure to varying noise levels from event activities
  • Outdoor or indoor environments depending on event
